We love Sri Lankan curries! They're deliciously spiced, nice and hot and rich with coconut cream.

We think you're going to love this dish which is fragrant & full of flavour.  It's an irresistible curry of roasted butternut and eggplant, which we then top with crunchy green beans and curry leaves. It's set to become a firm favourite on the menu in 2021!

Ingredients

Eggplant, Butternut Pumpkin, Tomatoes, Coconut Cream, Green Beans, Onion, Garlic, Olive Oil, Spinach, Ginger, Brown Sugar, Apple Cider Vinegar, Curry Leaves, Cinnamon Quills, Paprika, Ground Coriander, Stock Powder (Vegan), Cumin, Black Pepper, Yellow Mustard, Chilli, Salt, Tamarind, Cloves, Cardamom, Fennel Seeds, 

Pair with 

Simply pair with some of our coconut rice, or make your own plain rice.

Serving Sizes 

Our Sri Lankan-style curry comes in a 1kg serve. It's perfect for sharing with family, or to share between two and have leftovers to heat up the next day.

Cooking Instructions 

On the Stove Top:

Allow to defrost. Remove compostable bag and place in compost where possible or return to one of the Plant Kitchen team when they drop of your next delivery.

Put in a saucepan over a gentle heat and warm through until piping hot.

Serve with rice.
