A colourful and nutritious meal for one, or a lovely side for two or more people, our Mediterranean Quinoa salad is packed with delicious broccolini, roasted sweet potato, olives and sun-dried tomatoes. It comes tossed with our vibrant pumpkin seed pesto: toasted pepitas, blended with garlic, olive oil and basil. Serve it as a side with dinner, lightly warmed in the oven, or toss through some rocket leaves for a fresh summery lunch.
This salad is the perfect accompaniment to our Spanakopita pie, or served with some fresh salad greens as a light lunch.
Our Mediterranean Quinoa Salad comes in a 500g serve. It's a large serve for one person or, with a handful of rocket, a great lunch for two. As a side it will serve three to five people.

This container (despite its looks) is compostable in a commercial facility. Please return to one of the Plant Kitchen Team for composting when they drop off your next order.
Instructions: Serve warm or cold. Either allow to defrost in fridge overnight and serve, or cook from frozen. To warm from frozen, pop out of container onto an oven tray and warm in a very low oven (130) for 15 to 20 minutes. Stir occasionally.
