An easy, delicious and super healthy lunch or dinner, we sprinkle butternut pumpkin halves with a little cinnamon and salt, then slow roast them to bring out their natural sweetness. Then we stuff them with our middle eastern inspired quinoa & chickpea stuffing, filled with toasted walnuts, sliced apricots and sauteed spinach. Finally, we drizzle them with our house made chermoula sauce and sprinkle with black & white sesame seeds.
A light green salad or our Farro, Bean & Chermoula salad, and some of our Green Tahini & Yoghurt sauce.
Our stuffed butternuts are 700g each, so they're the perfect size to share between two people with a side. That said, we know a certain recipe tester who managed to finish one on his own...

Cook from frozen. Remove compostable bag and tray & place in compost where possible, or return to the Plant Kitchen team when they deliver your next order.
Place your Spiced Quinoa & Chickpea Stuffed Butternut on a baking tray. Cover with foil.
Preheat oven to 160°C & bake for 30 minutes, or until piping hot throughout. Remove foil, and bake for a further 10 minutes.
