Bake in advance and keep in the fridge for breakfast or a quick lunch, or pair with a salad for brunch with friends.
Full of wonderful Mediterranean ingredients like sun-dried tomatoes, slow roasted onion, olives and roast eggplant. We then pour over our plant-based batter and freeze.
Just pop in the oven for around 40 minutes and voila! Delicious, perfect, freshly baked frittata.
You can have the frittata on it's own for an easy lunch or dinner, or pair it with a nice salad if there are a few people sharing.
Our Mediterranean frittata comes in a 600g size, which will serve 2-4 people depending on accompaniments.

Your Frittata must be cooked from frozen.
Preheat oven to 120°C.
Remove compostable wrapper while still frozen. Place in compost if possible, or return to one of the Plant Kitchen team when they drop off a future delivery.
Place on a baking tray, in the oven and cook for around 40 minutes, or until the frittata has set. Check centre using a skewer or knife to ensure the batter has cooked through, if not, continue cooking until it has. Allow to cool in fridge before serving, the frittata will set completely.
